Willis Wilcox of Eddy, Texas proudly displays his winning entry in the "14th
Annual Possum on a Stick Barbecue Contest". Held every year in Deep
East,Texas  Wilcox said the secret to cooking winning possum was to "Get it
crisp on the outside and medium rare in the haunches". Wilcox added, "If you
wrap the tail in foil it won't burn off".
This year's contest drew nearly 14,000 people into the piney woods to get a
sample of East Texas' favorite treat prepared by experts.
The Godfather of Chili
Frank X. Tolbert may have been the Godfather
of chili but when it came time to eat, barbecue
was on the table.
